Ginger marinated pork chops
Croatians love their pork. This is our take on the classic pork chop - juicy, tender and flavourful!
Ingredients (4 persons)
800 gram of pork chops
4 tablespoons of olive oil
4 tablespoons of a good quality of soy
1,5 teaspoon of freshly grated ginger
1 clove of garlic
Whitewine
50-75 grams of cold butter
4 sprigs of rosemary
Procedure
Massage the olive oil, soy sauce, garlic and ginger into the pork chops and leave to marinate for 24 hours.
Turn on the oven at 160 degrees (celsius) hot air fan.
Sear the pork chops on both sides in a pan at medium to high heat to give the some colour.
Place them in an ovenproof pot and cover 1/3 of the pork chops with white wine. Put on the lid and braise them in the oven for 90 minutes.
Take the pot out of the oven and pour the braising liquid to a sauce pan. Let it cool a bit and remove the fat the may rise to the top level of the sauce.
Bring the sauce to a boil and reduce it if needed. Whisk in cold butter to thicken it.
Put the pot with the pork chops on a hot stove and place the sprigs of rosemary on top of the pork chops. Bring the sauce to a boil and pour it over the pork chops.
Put on the lid and give the pot a few minutes on the stove at medium heat.
Serve with oven roasted potatoes, chili mayo and a green salad.
Note: Make sure to choose a good cut of pork with a nice marble of fat, such as the neck of pork. This will give you a juicy, tender and flavourful result.
